Sheen is how much light the dried paint reflects. From least to most shiny: flat, matte, eggshell, satin, semi-gloss and gloss. Lower sheens hide wall flaws but are harder to clean. Higher sheens are tougher and wipe clean but highlight every dent, patch and roller mark.
